Purchase / Receive Morinda Citrifolia Fruit.
Record Organic Registration Number + Volume per Grower.
Weigh, Thoroughly Wash / Air Dry / Sort for Ripeness / Brix Test.
Place in Organic Approved Airtight Storage Drums

Natural Fermentation Process at Natural Ambient Temperature for a minimum of 12 Weeks
Press Fermented Fruit to release the Noni Juice.
Filter Juice through a Screen / Plate Filter.
Return to Storage Drums for further Fermentation.
Monitor Juice during this Critical Storage Period
Deliver Juice to Processing Plant for Flash Pasteurisation.
Attend to all Quality Assurance Testing : Test Brix + pH Levels.
Batch Sample to Public Health facility for Bacteriological Analysis.
